Peanut Butter Cookies
4 ounces butter/margarine
1/2 teaspoon vanilla
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup peanut butter (crunchy or smooth)
1 1/4 cups plain flour
1 teaspoon baking soda
Cream together the butter and sugar until lighter and fluffier. Mix in the vanilla and peanut butter. Stir in the flour and baking soda - the mixture will look quite dry but don't worry it'll hold together.
Roll the mixture into little balls and place on a greased baking tray. Use the back of a fork to press the biscuits down and then bake for 12 minutes at 180C.
